When the need for a sweet treat hits and you're faced with a rainy corner shop trip or an empty fridge things can get desperate. But this two-minute dessert takes just two ingredients and a pot of Greek yogurt, and it tastes as indulgent as a shop-bought treat.
As a bonus, you probably already have everything you need in your kitchen cupboard. Make sure you use full fat Greek yoghurt for the full-bodied, creamy experience, All you need for this recipe is half a lemon and some honey per person. In a bowl, put in your yoghurt, using whatever amount you normally would - I use about four tablespoons.
Then grab a whisk (or a fork if you don't have one) and give the yoghurt a quick beat to get any lumps out. Next, all you need to do is squeeze half a lemon into the bowl. Now, you can also add lemon zest, which you would need to do before you cut and squeeze the lemon - but I don't think this is a necessary step as you get all the flavour you need from the juice - and it disrupts the velvety texture of the bowl.
Whisk this together - it may look a little runny at first but once you fully combine it the acidity of the lemon subtly flavours the yoghurt and smoothes out the texture.
Next add honey. Ideally, this will be at room temperature otherwise it can be difficult to fully combine it with the yoghurt and the honey can sink to the bottom. You can also use maple syrup - but honey is cheaper and I find the classic combination of lemon and honey works better.
I add about a teaspoon and a half - but you can do this to taste - just like with the lemon. But I find half a lemon and this amount of honey perfectly balance each other out. The way to really level this treat up is to add a dash of vanilla extract and a tiny pinch of salt - this gives it the real, shop-bought dessert edge.
Don't be afraid of the salt - just like in cakes this just acts as a flavour enhancer and you can't taste it. You can eat this straight away - or if you want to enhance the flavour - let the ingredients meet in the fridge for about 15 minutes.
If you do do this step - make sure to give it another whisk through before you eat it as the honey may have sunk to the bottom. You can also add toppings to this - adding oats or granola would make a delicious lemony breakfast.
It could also act as a healthy alternative to cream with a crumble or a brownie - adding some sharpness to contrast and cut through the sweetness of your dessert.
